Three years after opening as a chic destination restaurant with global contemporary ambitions, Eleven has reached its most authentic expression yet. Today, the Franschhoek restaurant is deeply rooted in its valley, intentionally working towards being 100% Franschhoek-sourced – from staff and produce to crockery.
When Eleven opened in 2023, a tasting menu defined its ambition: contemporary, globally informed and hyper-seasonal. A snack menu followed, responding to its street-corner setting and balcony views. Over time, seasonality evolved into something more deliberate – hyper-locality. Place became identity.
“The identity of Eleven has been evolving for a long time,” says founder Ryan Shell. “This is as close as we’ve come.”
A pivotal shift was the move to an à la carte menu, making the restaurant more accessible to local diners. The aim is simple: cook what is available locally, as well as possible – so Franschhoek residents have somewhere that feels like their own.
Menus are now built around ingredients sourced from growers and producers within the valley. What began as intention has become a network of close relationships, with many ingredients bought directly from small-scale farmers. Eleven can already source all of its protein locally and around 60% of its fresh produce, with incremental progress continuing.
The offering retains its signature style. Snacks include oxtail arancini served with chilli aioli. Starters feature Three Streams smoked trout tartare with raspberry foam and fennel salad. Mains range from Dalewood whipped feta ravioli with smoked tomato sauce to La Combé suckling pig with sweet potato, apple, leeks and port demi-glaze. Diners can curate their experience, from a light lunch to a celebratory dinner.
The transformation extends beyond the plate. Wildflowers adorn tables, feathers mark place settings, and porcupine quills collected by a local farmer add subtle texture – gestures that reflect connection to land and community. The team is now almost exclusively Franschhoek-based, with young locals trained as part of the restaurant’s long-term vision.
“It’s not just about what we’re serving. It’s about who is serving you.”
The wine offering mirrors this philosophy, favouring proximity and relationships with local farmers and winemakers.
Eleven is no longer chasing elsewhere. It has become exactly where it is: a Franschhoek restaurant shaped by its valley, its people and its producers.
